    I blame too much coal for that. Was at a BBQ some 20 years go in London and as one of two kiwi blokes there we were automatically handed the tongs and put in charge. Our first lot of chicken ended up exactly how you describe before we got a bit more pissed and did a lot better on the steak before finishing with some chicken wings that turned out much better. I think the trick was to move them before the coals really fired up and scorched the shit out to them like they did the first lot.

    is it a case of the are more likely to have a small wood/coal bbq rather than a gas one you have more control over...people that dont often bbq start to by dropping a match on a pile of paper and lighter fluid? in Aus you hear about open flame bans alot

    @Crucial I will never forget being invited around for a slap up bbq about 7 years ago. Turn up and hold on.....he had two foil trays! Bourgeois fluffybunny. 3 hours after starting cooking I was munching down on some delicious, sloppy, raw burgers while I waited for the peri-peri chicken to cook.

    Poms I know here are good at bbq - use all the latest weber, green egg snd kamodo tech so it’s not surprising.

    Poms in HK were all over charcoal and raw.

    We have a SA butcher nearby which we go to. The bbq stuff we buy from him is off the scale. Best lamb chops on the planet.

    We have a SA butcher nearby which we go to. The bbq stuff we buy from him is off the scale. Best lamb chops on the planet.

    A South African mate of mine came and cooked at a piss up we had for around 30 or so blokes. Naturally every kiwi there talked up their own BBQing ability but his carefully prepared Braai was nothing short of outstanding. Lots of work goes into it but shit it tastes nice.

    It's true, in general we are not the world's best BBQers, but by the cringe the standards are varied. For many the idea of a BBQ is simply shit food cooked badly outside. This is usually instead of shit food cooked badly inside.

    There is a large element of die hard "it must be charcoal/wood" and I count myself in that camp although even here there are some differences, the main one being those that feel a BBQ is simply a grill and those that look at the option of long and slow.

    But yeah, we're not that flash overall.

    When I first arrived in London a few years ago I did some contract chef work as an on call emergency/troubleshooter. Basically when places were screwed for a night/week through absences or needed someone to clean up and sort out a kitchen after someone else's mess.

    Any I got asked to rush to a building site at Canary Wharf where they were going to compensate me well to cook up a BBQ for post work feed/drinks to appease a grumpy workforce.
    I got there to find tons of raw chicken legs and uncooked sausages, a split 44gallon drum, half a dozen bags of charcoal and some lighter fluid. When I asked what the timings were they looked at me strangely and said 'half an hour- they'll be hungry'
    They couldn't understand why I was pissed off as they truly thought that cooking over big flames was how a BBQ was meant to be.
    I managed to get food out by setting up a makeshift 'oven' on one side of the grill using foil containers and scraps of steel but FFS......

    The language used was often similar. 🙂

    Mostly it was emergency fill ins at 'gastro pubs' and the like. Just needed to be able to get in there and run the kitchen on short notice. I had one or two where I refused to work there unless the kitchen was shut for a complete clean and decontamination as there was no way I was going to serve food to people from such cesspits. Funnily enough they all had 3 star health safety ratings and I'm not super fussy.
    Punters really do not want to know what the average kitchen is like.
